Why the range

What moves this number.

If you want a better estimate than the table gives, these are the things worth paying attention to. Everything else is noise by comparison.

  • Sprout length. The longer the sprout, the more water per gram. Short-tailed moong is closer to boiled dal; long bean sprouts are closer to a vegetable.
  • Tadka. A teaspoon of oil with mustard seeds adds 40–45 calories.
