You cooked a pot of dal. It fed the family for two days. Somebody asks how many calories were in your bowl.

There is no answer on a packet, the servings were not equal, and half of it went into a container in the fridge. This is the single most common calorie-tracking problem in a home kitchen, and it has three solutions of descending accuracy.

Pick the one that matches how much the answer matters.

Method 1: cooked yield by weight

The accurate one. Do this for the four or five dishes you cook regularly and you have priced most of your week permanently.

  1. Total the ingredients. Add up the calories of everything that goes into the pot — including all the oil, which is the number people leave out.
  2. Weigh the finished dish. Tare the empty pot first, or weigh it and subtract. This is the step people skip, and it makes every serving look far lighter than it is.
  3. Divide. Total calories ÷ cooked grams = calories per gram. Multiply by 100 for a per-100 g figure you can reuse forever.
  4. Weigh your bowl whenever you want a real number, or learn what your usual katori comes to and stop weighing.

Why weight and not volume: cooking changes weight but not calories. Water boils out of a curry, water goes into rice and dal. The energy is conserved either way, so a calories-per-gram figure taken after cooking stays true however the dish thickened.

This is also the one place a kitchen scale genuinely earns its keep. One weighing prices a week of servings, which is a very different proposition from weighing every meal.

Method 2: equal servings by count

The quick one. Total the ingredients, decide the dish is six servings, divide by six.

This is fine — as long as the servings really are equal. That condition holds less often than people assume.

It works for: things portioned by construction. Rotis, idlis, dosas, cutlets, a tray of something cut into squares, individual containers packed for the week. The dish arrives pre-divided and the count is real.

It fails for: anything ladled. Dal, curry, sabzi, khichdi, rice from a shared pot. Whoever serves takes what they take, and the person eating the thick bottom of the dal is not eating the same meal as the person who got broth.

The error here is systematically one-directional in a way worth knowing: people who serve themselves tend to take more than an equal share of the dish they cooked. If you divide by six and there were really four and a half of your servings in the pot, every meal is 30% underlogged and you will never see it, because the number looks reasonable.

Method 3: the honest estimate

The everyday one. Someone else cooked it, you did not see the ingredients, and it is a Tuesday.

Look at what is in front of you, compare it to something you have already calibrated, and log a range.

One katori of dal, roughly the same as my usual — call it 120–180.

This is not a failure of method, it is the correct level of effort for the situation. A log that says 120–180 and gets written is worth more than a precise figure you did not record because you could not obtain it.

Two rules make estimates behave:

Anchor to something you have measured. Once you know what your own katori of dal comes to, every future katori is measured against a real number rather than an imagined one. Calibrate five foods once and the estimates stop being guesses.

Assume the high end for other people's cooking. You did not see the tadka go in. Restaurant and guest-hospitality cooking uses substantially more fat than your own, near enough always.

The three mistakes that matter

Forgetting the pot. Weighing the dish without taring makes every serving look 20–40% lighter in calories. It is the single most common arithmetic error in this whole exercise.

Missing the oil. Every teaspoon is about 40 calories and a dish routinely takes three or four. Missing the tadka on a dal you eat five times a week is 150 calories a day you will never account for.

Mixing raw and cooked figures. Rice roughly triples in weight when cooked; dal more than doubles. Applying a raw-weight calorie figure to a cooked weight is not a small error, it is a factor of three. Decide which basis you are using and stay on it.

Do it once, not every time

The point of all this is not to become someone who weighs pots.

Cook your regular dal. Do the yield calculation once. You now know that your dal is about 90 calories per 100 g and your usual katori is about 150. Write it down. You never do it again — from then on, "one katori dal" is a logged meal with a real number behind it.

Five dishes covers most people's cooking. That is an hour of work, once, and after it your everyday logging is a sentence per meal with numbers you actually trust.

Frequently asked questions

How do I calculate calories per serving for a homemade dish?

Add up every ingredient's calories, weigh the whole cooked dish with the pot's weight subtracted, and divide to get calories per gram. Multiply by your serving's weight. Dividing by a number of servings only works if those servings are genuinely equal.

Does cooking change the calories in food?

Not meaningfully. Cooking changes weight — water evaporates or is absorbed — but the energy is conserved. That is exactly why calories per gram must be worked out from the cooked weight, while the ingredient calories come from raw amounts.

How many calories is one katori of dal?

Do I count the oil left behind in the pan?

For dals and curries, all of the oil ends up in the dish, so count all of it. For something shallow-fried and lifted out, counting about three quarters is a fair assumption — and far better than ignoring it.

How often do I need to redo this?

Once per recipe, unless you change how you cook it. New bowls, a different rice or a noticeably heavier hand with the ghee are worth a recalculation. Otherwise the figure holds indefinitely.
