What moves this number.

If you want a better estimate than the table gives, these are the things worth paying attention to. Everything else is noise by comparison.

  • Oil temperature. Puris fried in properly hot oil puff quickly and absorb noticeably less. Cooler oil means a heavier, greasier puri — the same recipe can differ by 40 calories.
  • Size. Rolled by hand, so a small home puri and a large one are not comparable.
  • How many. Nobody eats one. A plate of four to six is where the number becomes significant.
  • What it comes with. Aloo sabzi and chole are themselves substantial, and the puri is usually the smaller half of the meal.
